Rustica Focaccia

Foccacia made with stale bread, potatoes, cheese and cured ham is the perfect pie when you have stale bread left.


  • about 200 gr of internal bread
  • 2 medium potatoes
  • 3 tbsp of Parmesan cheese
  • 100 gr diced San Francesco ham
  • 1/2 teaspoon of yeast
  • 1 egg
  • 50 gr of Emmenthal cheese
  • salt
  • black pepper.

  • Ready in 40 minutes


Soften the bread in warm water, squeeze it and crumble it into a bowl. Add the grated potatoes (from raw), Parmesan cheese, beaten egg, salt, pepper , cheese and ham cubes. Stir and then add the yeast. The mixture should be soft. Mix the ingredients and place them in a baking pan previously greased 20cm diameter and bake in preheated oven at 180 degrees on the middle shelf for about 20-30 minutes until it gets golden.
