Drain the mozzarella and cut it into cubes. Cut San Francesco ham into thin strips. Place the bread dough, lightly floured, on the work surface and roll it out with a rolling pin into four discs of about half a centimeter thick.

Stuff half of each disc with egg and ricotta cheese, mozzarella, ham, Parmesan and a pinch of salt. Once the filling has been laid, fold each disc in half, pressing firmly the edges to seal. Take care that the mixture does not break during the filling

Preheat the oven to 220 °. Brush a baking sheet with oil and lie down the “calzone” and cook for 20 minutes. Remove from the oven, transfer to a plate and serve hot.

You can also fry the “calzone” in olive oil.
