National Prosciutto crudo

Il Prosciutto Crudo Nazionale is obtained by processing fresh pork legs from only European slaughterhouses, certified and accredited in our supplier list. The pork leg is trimmed internally with the removal of the leg and trimming that gives a cut suitable for salting and makes the legs homogenous, preparing them for the next phase. The ham obtained from these thighs is characterized by a higher protein component than the fat component, resulting in a slightly lower fat layer than domestic products. This feature allows the product to lose moisture (less internal free Aw) faster than products of larger size and more fat. The product reaches its ripening already at 9 months of maturation. Raw ham is a product characterized by containing many mineral salts, an intense intake of vitamins, few fats and proteins that, as a result of aging, become easily digestible.

For lovers of tradition, who appreciate enjoying a slice of raw manually cut and that enhance the scent of the product, this has always been the best choice.

For activities such as restaurants, hotels, sandwiches and the Piadinerie, which need to combine quantity, comfort and practicality, the whole raw ham already boned vacuum packed, which guarantees a prolonged shelf life, is the preferred choice. The product is pressed into molds that give it a precise shape that is reflected in the slices.

Decoration de-boned raw ham is characterised by a de-boning process in which the bone is removed laterally so that there are no frontal cuts. Packaged in a rounded shape thanks to plastic strapping, it allows to obtain large and round slices when cut, perfect for the best gastronomies.

In the last decade, in the face of the increased demand for pre-packaged raw ham in the pan, we specialized and increased the production of our so-called "Briquette". To obtain it, we pass through specific stages of processing and then get to be printed in the form of a parallelepiped, thus acquiring the final shape of the slices that we will find in the tray and that we all know.

It was created for those who do not want to give up the beauty of the elongated slice but at the same time does not need large quantities of product, thus being able to enjoy the different facets of taste.

Our particular "drop" ham, unique and refined, with its shape that makes it ready for cutting with consequent greater yield during slicing, is enriched with the addition of Truffle. After boning, it is thoroughly cleaned and, in the space where the bone was removed, summer truffle shreds (Tuber Aestivum vitt) are added. This combination, which enhances the flavors, makes it unique.
